Pineapple pico de Gallo

This pico de gallo is low in calories, making it a great addition to meals without adding excessive calories. All ingredients are highly hydrating , refreshing and packed with micronutrients such as antioxidants, vitamin C and A as well as fiber.

Now let's get chopping!!

Ingredients:

  • 1 cup of fresh pineapple , diced
  • 1 medium tomato, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced (adjust for heat preference- optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste
  • 2-3 tablespoons of pineapple mango NuSauce

Instructions:

  1.  Dice the pineapple, tomato, red onion, and jalapeño. Chop the cilantro.

  2.  In a bowl, tomato, red onion, jalapeño, and cilantro.

  3.  Squeeze the lime juice over the mixture, add salt to taste, add the freshly diced pineapple and drizzle in the NuSauce. The saucier the better ;)

  4. Gently toss everything together until well combined. Let it sit for about 10 minutes to allow the flavors to meld before serving.
